Careers In Corrections: Adminsitrative Services

FOOD SERVICES:

The ND Department of Corrections and Rehabilitation has the responsibility of providing food preparation and meeting the dietary needs of offenders placed into secured facilities operated by the DOCR.  The DOCR has several positions that manage comprehensive institutional food service programs.  Minimum qualifications for food service positions range from obtaining a high school education with one year of food perpetration experience to obtaining a bachelors degree in dietetics or food services.

Employment positions within the DOCR in Food Services are:
Cook I and Cook II:  

Duties include preparing meals in accordance with the dietary needs of individuals incarcerated in a secure facility within the DOCR.  Responsibilities include ensuring nutrition requirements and maintaining food preparation to specific guidelines and individual food preferences.

Minimum qualifications:

  1.  Cook I requires a high school diploma or GED and one year of similar food preparation experience

 

  1.  Cook II requires a high school diploma or GED and two years of similar food preparation work experience.

Food Service Director I and II:

Responsibilities listed below for the Food Service Director classification are not an all inclusive list.

Duties include preparing and serving nutritional meals according to menu guidelines; maintain food at proper holding and storage temperatures according to Hazard Analysis and Critical Control Point (HACCP) guidelines.  Other responsibilities include preparing and modifying therapeutic diets; maintain and update recipes. Estimate food supply requirements and initiate requisitions for food and supplies; adjust quantities based on population changes, recipe requirements, and use of commodities. Responsibilities include making recommendations and assist in developing specifications for food service equipment. Establish and maintain policies and procedures concerning all food service areas. Train all personnel on food preparation, storage, sanitation, and safety according to specific standards. Maintain and record proper dry storage and cooler and freezer temperatures. Assist with preparing and monitoring budget; prepare all required reports. The Food Service Director II position has the responsibility for the overall administration of the North Dakota State Penitentiary Food Services Program, which includes all satellite dining halls. This position coordinates operations with all phases of programs, security, medical and administration within the DOCR.

Minimum qualifications:

  1. Food Service Director I requires a Bachelors of Science in Business Administration, Dietetics or Food Services and one year of work experience similar in type and complexity to professional experience in a large scale food service program.

 

  1. Food Service Director II requires a Bachelors of Science in Business Administration, Dietetics or Food Services and three years of work experience similar in type and complexity to professional experience in a large scale food service program.
